Initially, I grated five apples and removed their skin. I stewed them with a teaspoon of cinnamon, a teaspoon of ginger powder and two tablespoons of natural sweetener. I left them on medium heat until all the juice was reduced. For the sheets, I used one hundred and fifty grams of ground hazelnuts or walnuts, a teaspoon of baking powder, twenty grams of cocoa. I mixed everything and set aside. In a mixer bowl, I mixed four eggs, a pinch of salt, three tablespoons of natural sweetener. When the composition tripled in volume, I added the dry ingredients. Optionally, a vanilla essence, and the resulting composition I divided into three equal parts and baked the sheets in a tray with a diameter of twenty by twenty centimeters at one hundred and eighty degrees, for about ten minutes. I left them to cool, then filled them with the apple composition, also well cooled. Optionally, you can sprinkle with ground hazelnuts or walnuts.
