2023.7.19 Chiro-chan's warm cooking I made pork eggplant somen, eggplant and salted kelp that I was doing at Masahiro Kasahara's side dish dojo.
Pork eggplant somen
【material】
Thinly sliced pork belly 150g
2 eggplants
3 bundles of somen noodles
1 clove of garlic
2 and 1/2 spring onions
15g ginger
1/2 tablespoon sesame oil
1 tablespoon salad oil
Ground sesame white 1 tablespoon
400ml chicken broth
2 and 1/2 tablespoons miso
1 and 1/2 tablespoons soy sauce
1 and 1/2 tablespoons mirin
Gochujang 1 tablespoon
1/2 tablespoon sugar
[How to make]
Heat the sesame oil in a frying pan and fry the pork cut into 3cm widths. Stir-fry the slanted eggplant and minced garlic. After that, add the glass soup, mirin, soy sauce, sugar, miso, and gochujang paste, bring to a boil, and simmer for 5 minutes to complete. Boil somen noodles and rinse thoroughly with water to remove sliminess. Add salad oil and ginger juice and mix. Place the dipping sauce in a bowl, top with finely chopped green onions, and ground sesame seeds to complete the dish.

2023.7.19 ちろちゃんのあたふたクッキング 笠原将弘のおかず道場でやっていた豚ナスそうめんとナスと塩昆布の和えものを作りました。
豚ナスそうめん
【材料】
豚バラ薄切り肉 150g
ナス 2個
そうめん 3束
にんにく 1かけ
万能ネギ 2と1/2本
生姜 15g
ごま油 大さじ1/2
サラダ油 大さじ1
すりごま白 大さじ1
鶏がらスープ 400ml
みそ 大さじ 2と1/2
醤油 大さじ1と1/2
みりん 大さじ1と1/2
コチュジャン 大さじ1
砂糖 大さじ1/2
【作り方】
フライパンにごま油を熱し、3㎝幅に切った豚肉を炒めます。斜め薄切りにしたナス、みじん切りにしたにんにくを炒めます。その後ガラスープ、みりん、醤油、砂糖、味噌、コチュジャンを入れ一煮立ちさせ、5分煮たら完成。そうめんは茹でてしっかり水で洗いぬめり気を落とします。サラダ油と、生姜のしぼり汁を加え混ぜます。つけダレは器に入れ、小口切りにした万能ネギ、すりごまを乗せると完成です。
