You have to do the freeze, thaw method.
Freeze it (in it's package and all) then thaw it completely (again in its package) then freeze it AGAIN. When you need to use it just let it thaw and cook like normal but I find this method creates these air bubbles for flavor inside that are perfect for marinating after. Time consuming? Yes. Totally worth it though? OHHH YES.
