I like slow steeping some aromatics in the oil first

Sichuan peppercorns
Fennel seeds
Cumin
Coriander seeds
Star anise
Black and white peppercorns
Chinese cinnamon bark
And 1 lightly crushed skin on garlic clove.

Steep over low heat for 2 hours and then pour into your chili mix. Cool and jar and use whenever. :>
