Ingredients
2 lb ground brisket (or 80/20 ground chuck)
2 yellow onions, sliced
1 lb bacon, cut into cubes
¼ cup brown sugar
¼ cup balsamic vinegar
1-2 tablespoons Worcestershire sauce
2-3 teaspoons Blackstone Essential Seasoning
2-3 teaspoons Blackstone Blackened Seasoning
4 brioche buns
1-2 tablespoons mayonnaise
Sliced tomatoes
½ head of lettuce

Directions
1. Pre-warm the griddle on low heat.

2. Prepare the bacon and onions: Add the cubed bacon and sliced onions to separate areas of the griddle.

3. Cook the bacon until it’s nearly crispy, then remove and set aside.

4. Caramelize the onions: In the bacon fat, cook onions until they are caramelized. Stir in the brown sugar, balsamic vinegar, and Worcestershire sauce. Cook until soft, then add the bacon back to the onions and let it all simmer. Move to a cooler area on the griddle.

5. Shape the burger patties: Use a ring mold or shape by hand into 5.6-ounce patties. Season each side with Blackstone Essential and Blackened Seasoning.

6. Cook the burgers: Increase the heat to medium-high until you see wisps of smoke. Place the patties on the griddle and season the other side.

7. Toast the buns: Toast brioche buns in the beef tallow left from the patties and set aside.

8. Assemble the burgers: Top each patty with the onion-bacon jam, add a slice of American cheese, and let it melt. Spread mayonnaise on the bottom bun, add a tomato slice, then the burger patty with jam and cheese. Top with lettuce and the other half of the bun.

Hmmm not a fan of the speed. I know you have to get it done in roughly 2 minute short clip, but if you can’t, don’t make the video into a two minute clip if it doesn’t sound right this just sounds off. I’ve got no problem watching the longer video. Everything doesn’t need to be a short.
