My suggestion would be to try candied rose petals or sugar coated edible rose flower (chinese tanghulu) for a dramatic plating. You are doing great stuff, eagerly waiting for the final product.

Your food series are amazing. Hope it will come out well. Just a suggestion-
-Insted of making two different mousse, you may go with only one mousse( pista mousse with finely cut almonds in it). It will elevate the texture of your mousse.
- You can use the ghewar as a crumble on which you can place the mousse.
- You can make a saffron flavoured sugar syrup, which will be drizzled over the mousse. As it is going to be pistachio mousse this red syrup will give a great look to the mousse.
- Dome is a very good idea, but making it with sugar( sucrose) syrup insted of isomalt will preserve the authenticity of the dish.
