Cook schedule: ~200 degrees and smokey AF for 2 hours 250 degrees until you hit the stall, about 165 IT and 6-8 hours in 275 degrees until you come out of the stall, about 175IT and 7-9 hours 280 degrees-ish until the brisket is done… 12-15 hours, usually somewhere around 200-205 IT I pulled and wrapped in butcher paper with some beef tallow, rest as long as you can stand. I let this one sit over night but 3-4 hours should do it.
