Vanilla Spiced Apple Turnovers
What's good y’all, @manaforthesoul_ just dropped the recipe for these Vanilla Spiced Apple Turnovers and they are super easy to make with either store-bought or homemade puff pastry and a crazy good apple filling made from scratch. They're light, flaky, and just delicious. And also - they only take a few minutes to prep, making them the ultimate dessert for any season.
For the Turnovers:
1 Tbsp butter
2 cups cored, peeled, and diced apples (3-4)
¼ cup brown sugar
1 tbsp lemon juice
½ tsp cinnamon
¼ tsp of cardamom
⅛ tsp of salt
1 tsp cornstarch
1 tsp vanilla extract
2 sheets frozen puff pastry thawed ( Or home made puff pastry )
1 large egg
1 tsp water
For the Glaze:
¾ cup powdered sugar
1 tbsp milk
1 tsp vanilla extract
Preheat the oven to 400F. Line 2 baking sheets with parchment paper. In a skillet over medium heat, melt butter and cook apples for a few minutes, stirring frequently. Add brown sugar, lemon juice, cinnamon, cardamom, and salt. Cook until the apples are softened and syrupy, about 5 minutes. Reduce heat to low. Sprinkle in cornstarch and stir until juice thickens, about 1 minute. Remove from heat, add vanilla. Transfer to a bowl, let cool for 15 minutes, then refrigerate until chilled, about 30 minutes. Roll out puff pastry sheets on a floured surface into 12-inch squares. Cut each sheet into 4 squares. In a small bowl, beat egg and water. Brush the edges of each square with egg wash. Place a few tablespoons of filling in each square. Fold one point of pastry over filling to the opposite point, creating a triangle. Crimp edges with a fork, brush top with egg wash, cut small slits, and sprinkle with sugar. Bake for 18-20 minutes or until the pastry is golden and puffed. Let cool for 15 minutes. In a small bowl, combine powdered sugar, vanilla and milk, whisk until smooth. Thin with more water if needed. Drizzle over warm turnovers and enjoy!
