I have not made potato salad in over five years. I have some Avacado mayo with half the calories and could add a little apple cider vinegar and a large pinch of sugar and touch of salt to get that full tang and taste of regular mayo. Your salad looks so good. I love onions. The salad reminds me of when I had my first taste of Dill seasoned devilled eggs. They were delicious. Now I am wondering about Dill seasoned potato salad. Potato salad is one of my favorite foods to eat. My husband and I are on low carbs now so I canāt have it very often. Every thing you cook looks delicious.
