Serves 1-2
Ingredients
1 can hearts of palm, drained
2 Tbsp whole bread crumbs or whole wheat panko crumbs
1 tbsp of whole wheat flour
2 Tbsp Parmesan cheese
1/2 tsp garlic powder
Salt TT
Oil spray
Optional: ½ Cup Marinara Sauce for Dipping
Directions
Preheat the oven to 400°F.
Line a baking sheet with parchment paper and spray with oil.
Mix bread crumbs, flour, parmesan cheese, garlic powder and salt to make the bread crumb mixture.
Roll the hearts of palm into the bread crumb mix, and press down firmly so the bread crumbs stick. You mav want to drv them off using a paper towel first to help the process. Place on your baking sheet.
Spray the tops of the hearts of palm with oil spray and bake for 20-30 minutes. I broiled it for another 2-3 minutes at the end to get it extra crispy.
