1903 Springfield and the Enfield are really good and have been used to take many deer. Many a soldier returning from WW I took the 1903 into the woods for their game getting needs, or so I have read. My buddy bought a nice sporterized 1903 for next to nothing. These two rifles would have replaced a couple on your list. I did own a sporterized 8mm Mauser that I took a deer with and kick myself for selling it.

Been using a NO4 Enfield for years. No complaints. It's sporterized mostly by me but it was sporterized beyond hope when I got it so I saw no harm in completely customizing it.

Ive a couple Swedish 6.5x55 Mauser rifles that are outstanding hunting rifles.
Not much in the way of deer here in the west of Aussie, but devastating on Kangaroos, foxes, wild dogs, feral pigs, even the donkeys that run wild around here.
139 grain spitzer projys do a number on anything ive put them into.

In the 90's I've seen a native brother hunt boars in the mountains with Arisaka and he still hunts with it amazingly

I know everybody says it, but I'll do it anyways, wish I picked up several SKS's and a Mosins, 15-20 yrs old when they were dirt cheap. I'll be that guy, kicking myself.

Missed mine, 1st, 03 A3 sportered by P.O. Ackley in .270. 2nd 1891 Argentine Mauser in .257 Roberts. 3rd, 6.5 Arisaka sportered. The sportered versions are cheaper and they're great rifles. The first two are .5 MOA at 100 yards.
