Anoxic denitrification.
Literally throw fired clay shards (cheapest is the crappiest cat litter you can find or quick dry from tractor supply) in the substrate with some iron sources (iron rich clay or nails) in the bottom of the tank or sump. Pack it deep and make sure that there's not a ton of water circulation in the substrate to keep the oxygen low. That's all you need to do. It takes several months for the bacteria colony to properly populate, but once it has it's as close to set it and forget it as you can get.
If you want a substrate that looks nice, go buy a couple of bags of Turface or Turface pro league. Less rinsing required to dedust and it looks amazing.
I know a discus breeder who went from roughly 80% water changes daily to a total of 15-20% per week, and that's with massively overcrowded tanks. The system works. Look around for no/low water change stuff on youtube/google for a lot more in depth analysis of it.
