Unless you grew up in an Italian peasant-food cooking style family, chances are this dish doesn’t look remotely Italian. This is my version of my Grandma Lucia’s giambotta. What the heck is #giambotta ?? Giambotta is a classic Italian vegetable stew. It’s usually a celebration of the end-of-season summer bounty of the garden, and welcomes any and all vegetables that you can get your hands on. My grandma made it all the time with whatever veggies she had in the fridge — plus cut up hot dogs, chicken cutlets, Italian sausage, or meatballs — and a can of kidney beans with the juice. I know it sounds weird….but it’s delicious and tastes different but the same every time. It’s pure comfort in a bowl and absolute nostalgia for me. I wish I could taste hers again — because hers was made with love.
