Brining a whole chicken, chicken breast, or thighs will make it so juicy. It also gives the meat incredible flavor. This brine is my favorite and tastes good with BBQ sauce, or if I turn the chicken into fajitas, or simply grill it to eat plain.

Recipe:
1 gallon water, divided (1/2 water, 1/2 ice)
1/3 c Kosher Salt
1/3 c Honey
Lemons, cut or sliced
2 T Peppercorns
6 cloves smashed garlic
Herbs of your choice, and fresh if you have them (I used parsley, bay leaves, thyme, and rosemary)

Bring all ingredients (except chicken and ice) to heat enough for the honey and salt to dissolve.

Because I didn’t want to wait for the water to cool down, I added a bunch of ice so I could start brining my chicken right away. I added 4 large chicken breasts for this amount.

Chill in refrigerator for at least 2 hours and up to 24 hours (depending how thick your cuts of meat are…it could get too salty!). If you don’t need to eat all the chicken right away, take it out of the brining liquid and store refrigerated in a container or it will get too salty.
