The Pass is the tabletop where the food is finalized and passed from the expo to the front of the house runner where the food will go out into the dining room and be eaten by the guest. From the Pass, the chef can look out into the dining room and read the faces of the either satisfied or disgruntled guests and also see into the back of the kitchen hotline where they can read the same emotions from the team. Being on the pass we are in a position to look both out in front of us and behind us into the kitchen.
