This mouthwatering recipe is known for its aromatic spices and succulent meat, making it a favorite at family gatherings and celebrations Ingredients: • Spice Mix: o 2 tsp coriander seeds o 1 tsp cumin seeds o 1 tsp peppercorns o 1 star anise o 5 cloves o 2 cinnamon sticks o ¼ tsp poppy seeds o 10-12 Baydgi chilies (dried) • For the Pork: o 1 kg boneless pork o 1 tsp salt o 1 tsp turmeric powder o 2 tbsp roasted spice powder (from above) o 2 tsp vinegar o ½ tsp oil o 15 garlic cloves, crushed o 1 inch ginger, minced o 2 tbsp oil (for sautéing) o 2 green chilies, chopped o 1 large onion, chopped o Curry leaves (for garnish) Instructions: 1. Prepare the Spice Mix: o Dry roast coriander seeds, cumin seeds, peppercorns, star anise, cloves, cinnamon, poppy seeds, and Baydgi chilies until fragrant. o Let cool and grind into a fine powder in a mixer jar. 2. Marinate the Pork: o In a bowl, combine pork, salt, turmeric, roasted spice powder, and vinegar. Mix well. o Marinate for 30 minutes to 1 hour. 3. Cook the Pork: o Heat ½ tsp oil in a pan on high flame. o Add marinated pork and sauté until it comes to a boil. o Add crushed garlic and minced ginger. Do not add water or onions at this point. o Cover the pan and reduce the flame to medium-high. Cook until the pork is 50% done, then lower the flame and cook until fully cooked and the water has evaporated. Remove the pork and set aside. 4. Sauté the Aromatics: o In the same pan, heat 2 tbsp oil. o Add 2 tbsp crushed garlic, minced ginger, and chopped green chilies. Sauté well. o Add the chopped onion and cook until translucent. 5.
