At age 10, Hiroyuki Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. He also has a Guinness World Record w/ Gordon Ramsay. He has been on Youtube for 11 years.
Michael Collantes earned his first Michelin star in 2022, a year after launching Soseki Modern Omakase in Orlando, FL a 10 seat multi-course tasting menu. Michael has spent 20 years in the industry w/ some of the best chefs and companies in the industry. From Wolfgang Puck, Joel Robuchon to brands like Levy Restaurants, MGM Grand, and the Ritz Carlton. Michael now spends his time developing the culinary program at Soseki, creating content for 86Media and the podcast as well as consulting for all things hospitality.
